Featherington Fruit Tarts: A Bridgerton-Inspired Recipe

Hello, Bridgerton fans and baking aficionados! Today, we’re bringing a burst of vibrant color and flavor to your kitchen with a recipe inspired by the flamboyant Featherington family. These fruit tarts are a delightful blend of fresh, juicy fruits and creamy custard, all nestled in a flaky pastry crust. Ingredients

For the Pastry Crust:

  • 1 package of ready-made pie crusts

  • 1 egg (for egg wash)

  • 1 tbsp. water

For the Pastry Cream:

  • 2 cups whole milk

  • ½ cup granulated sugar

  • 4 large egg yolks

  • ¼ cup cornstarch

  • 2 tbsp. unsalted butter

  • 1 tsp. vanilla extract

For the Fruit Topping:

  • Fresh berries and sliced fruits (strawberries, blueberries, kiwi, raspberries, etc.)

  • ½ cup apricot jam

  • 1 tbsp. water

Instructions

Step 1: Prepare the Pastry Crust

Preheat your oven to 375°F (190°C). Roll out the ready-made pie crusts and cut into small circles using a cookie cutter to fit into a muffin tin. Press the dough circles into the muffin tin to form small tart shells.

Step 2: Blind Bake the Tart Shells

Prick the bottoms of the tart shells with a fork to prevent them from puffing up during baking. In a small mixing bowl, whisk together the egg and water to create an egg wash. Brush the edges of the tart shells with the egg wash for a golden finish. Bake for 10-12 minutes or until the tart shells are golden brown. Let them cool completely.

Step 3: Prepare the Pastry Cream

In a medium saucepan, heat the milk over medium heat until it just begins to simmer. In a separate mixing bowl, whisk together the sugar, egg yolks, and cornstarch until smooth. Gradually pour the hot milk into the egg mixture, whisking constantly to prevent curdling. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens and comes to a boil. Remove from heat and stir in the butter and vanilla extract. Transfer the pastry cream to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and chill in the refrigerator until set.

Step 4: Assemble the Tarts

Once the tart shells and pastry cream have cooled, fill each tart shell with a spoonful of pastry cream. Arrange the fresh fruit on top of the cream, creating colorful and eye-catching patterns.

Step 5: Prepare the Apricot Glaze

In a small saucepan, heat the apricot jam and water until smooth and slightly thickened. Brush the glaze over the fruit to give the tarts a beautiful, glossy finish.

Step 6: Serve and Enjoy

Arrange the finished tarts on a decorative platter and serve immediately. These delightful fruit tarts are perfect for adding a touch of Featherington flair to your Bridgerton-themed gathering.
